Tired of the same hot turkey sammiches, cold turkey sammiches, ad nauseum after Thanksgiving? Give this a try. Simple, and easy to make, trust me.
1 1/2 cups diced leftover turkey*
8 slices bacon, crisply fried, crumbled and drained on a paper towel
1 cup shredded sharp cheddar cheese (or jack/cheddar mix)
1/2 cup Bisquick Mix
1 cup milk (use whole milk if possible, but no less than 2%)
2 eggs (room temp)
Preheat your oven to 400 degrees. Coat the bottom and sides of a 9 inch glass pie dish with Crisco solid shortening (don't use that spray crap).
Place the turkey, bacon, and cheese in the pie dish, mix lightly, and set aside. In a small mixing bowl, hand whisk the eggs, milk, and Bisquick until smooth (some lumps will happen, not a problem), and pour over the turkey, bacon, and cheese.
Bake for about 30-35 minutes or until a knife inserted in the center comes clean. Keep an eye on it, it becomes golden brown quickly.
Let it stand about 5-10 minutes before serving. I place a dollop of sour cream on top before eating:)
*can also use diced chicken.
